RECIPE: QUICK CEVICHE
Today’s ceviche recipe is quick an easy and something you can take with you to Mexico this weekend. – by James Byrne, After Dark Grafx

WHAT YOU NEED:

  • 1 to 2 lbs of Shrimp. Buy the frozen already deveined shrimp with tail on
  • Garlic Clove
  • Lime Juice (squeeze bottle is fine)
  • Salt and Pepper
  • 1 Purple Onion (or more to taste)
  • 1 Orange
  • 3 to 5 Tomatoes
  • Tequila 1 Shot (optional)
  • Clamato (optional)
  • Fruit Zester (little tool that looks like a fork for scraping the outside of fruit)
  • Tortilla Chips
  • Large Bowl

HOW TO PREPARE:
PREP TIME: 10 MINS
TIME TO COMPLE: 30 MINS
Most ceviche uses raw fish, shrimp, scallops, etc. and usually is placed in a lot of lime juice over night and covered in plastic so that the citrus basically cooks the fish.  This recipe is faster and tastes just as good.

  1. Boil Shrimp in a pot of hot water and add a few cloves of garlic in with them
  2. Chop up the Onion into small pieces.
  3. Chop up the Tomatoes into small pieces. Some people choose to use just the outer portion of the tomatoes.
  4. Wait until the shrimp turn a light shade of pink then wait another 2 minutes.
  5. Remove shrimp and pour over pasta strainer and allow to cool
  6. Remove tails from shrimp
  7. Chop up shrimp into smaller pieces. Some people like really small pieces but I recommend just cut them into 3 pieces each.
  8. Add shrimp to large bowl
  9. Add Onions and Tomatoes to the bowl
  10. Add a pinch of salt and pepper to taste.
  11. Add about a cup of lime juice
  12. Dice up a clove or two of garlic (just one or two pieces) and chop very fine
  13. Use your fruit zester to scape the outside peel of the orange to get the shavings of the orange and then squeeze the Orange into the bowl.
  14. I usually add Tequila at this point and a dash of Clamato
  15. Taste it throughout the process.
  16. I then scoop mixture into Ziplock bags and through in the fridge until it is time to leave.

Some people like to add hot sauce like Tabasco or other but this is a quick dish. Don’t forget to Buy your car insurance to Mexico and take this with you to the beach!
